An Indian bread stuffed with sweet yellow gram paste is said to be Puran Poli or Vedmi, a very popular sweet dish of Maharashtra and Gujarat.
ingredients for Puran Poli:
- Split Bengal gram: 1cup (250 gram)
- Jiggery: 1cup
- Cardamom powder: 2 teaspoon
- Nutmeg powder: 1 teaspoon
- Refined wheat flour: 1 ½ cup
- Oil/ghee: 5 tablespoon
- Saffron water: 2 tablespoon
- Water: as per required
- Salt: a pinch
How to make Puran Poli:
- First of all, rains the split Bengal gram very well,
- Boil 3 cups of water in pressure cooker and add split Bengal gram cook for 15minutes until done or cook it for 5-6 whistles,
- Take 1 ½ cup of refined wheat flour in another bowl,
- Add 2tbsp oil, a pinch of salt and 2tbsp saffron water,
- Mix and knead into a soft dough,
- Cover the dough with the wet towel and keep aside for 10 minutes,
- When Bengal gram is ready then add all the chopped jaggery,
- Mix and cook for 15 minutes on low flame until mixture soak the water,
- Now add nutmeg powder and cardamom powder and mix nicely,
- Keep aside for making this stuffing cool,
- Take this stuffing in grinder jar and grind dry and thick, turn off the flame,
- Now our Puran Poli stuffing is ready, keep aside,
- Take a medium size ball from the dough and roll it circle shape on rolling board with help of dry flour,
- Place the 1tbsp of Puran mixture in the center of the rolled dough,
- Bring the edges together towards the center and join all the edges and pinch them,
- Help of dry flour and start rolling the dough,
- Make a small to medium sized circle depending on the size of dough,
- On a heated tawa, spread ½ tsp of ghee and place the rolled Puran Poli on the tawa,
- Cook this Puran Poli both the side with grease some ghee, until it becomes golden brown color,
- Make all the Puran Poli in the same way and cover them in a casserole.
- Finally, the Puran Poli is ready, Serve the Puran Poli hot with ghee or curd.
